Bacon.

Rarely do you encounter a person that doesn’t love bacon.

And, while in our society bacon has become something horrible for you that you should never eat, it really doesn’t have to be.

No it shouldn’t be the basis of your diet, BUT nitrate and nitrite-free bacon CAN be a part of a healthy diet.

Anytime I can, I sneak just a little bit of delicious bacon into my meals I do.

Fat isn’t the enemy.

Bacon isn’t the enemy.

Processed crap…Well that is the enemy.

Anyway, here are some great BACON tacos. Dates, bacon, Manchego cheese and some pistachio pesto make these super different and DELICIOUS!

Chicken, Bacon, Date Tacos with Pistachio Pesto

Ingredients:
Tacos:
1lbs Chicken Breast
3 Strips of Bacon
1 cup Whole Dates
Manchego Cheese to top
6-8 Corn Tortillas

Pistachio Pesto:
1/2 cup Pistachios
1 clove Garlic
Juice of 1/2 lemon/lime
1 1/2 cups Arugula, not super packed in
1/4 cup Olive Oil
1 cup Sour Cream
Salt and Pepper to taste

In a food processor, combine all of the ingredients for the pistachio pesto sauce. Process until smooth. You may have to stop the processor and scrap the sides down a few times.

Set pesto aside when smooth.

For the tacos, cook the bacon in a skillet until crispy on medium/high heat. Remove from pan and save some grease to cook the chicken in.

Chop up the chicken and add to the bacon grease with just a little salt, pepper and garlic. Cook the chicken on medium heat until chicken pieces are almost cooked through.

While chicken is cooking, dice up dates. Add to chicken when almost cooked through and lower heat to medium/low.

Stir well to combine everything in the skillet.

While chicken and dates are on low heat, heat tortillas in a skillet or microwave.

Once chicken is cooked and tortillas are warm, top the tortillas with the chicken mixture. Then crumble bacon on top and add a dollop of pesto.

Grate some Manchego cheese on top if you want and serve!

NOTE: With the dates, you can also put them in a food processor and turn them into a puree to place on the tortilla itself and then top with the chicken mixture instead of adding them to the skillet.

I love this recipe because it is sweet, salty AND fatty. Satisfies all the cravings!
