I firmly believe that our bodies need carbs. And that the foundation of a healthy diet is eating as little processed food as possible while eating as many nutrient-dense foods as possible.
When I’ve done a hard workout and need to replenish my glycogen stores, I eat rice, potatoes, fruit and CORN TORTILLAS. I don’t deprive my body of carbs.
However, my carbs are always as minimally processed as possible. I only eat corn tortillas where the ingredients are: corn, water and lime.
The less processed food in your diet, be you Vegetarian, Vegan, Primal, Paleo…or whatever, the healthier you are going to be.
Also, the more SUPERFOODS you can include, the better off you are going to be.
While there is no magic food that is going to make you instantly healthy, skinny or strong, there are foods out there that pack a lot of punch – that give you a lot of bang for your buck.
That don’t have a ton of calories but pack a ton of health benefits.
These foods are nutrient-dense and often labeled SUPERFOODS.
One great superfood, which is generally more expensive and rarely found at the local grocery store is Black Garlic (a fermented garlic). Just Google Black Garlic health benefits and a list of articles all touting it for it’s anti-cancer and cholesterol-lowering and even immune system-building benefits.
Black garlic even helps your body process glucose, which may help curb your sugar cravings to help you lose more weight. And supposedly it can even help reduce fatigue from exercise and improve your strength.
Needless to say it super nutrient-dense.
And fortunately now, it is available at Trader Joe’s…And at a very reasonable price! (Along with great corn tortillas that contain no preservatives.)
So after our shop at Trader Joe’s and our discovery of the black garlic, Ryan made:
Trader Joe’s Black Garlic Beef Tacos
1 lbs Grass-fed Ground Beef
1/2 Large Onion, Diced
6-8 Corn Tortillas
1/2 cup Shredded Green Cabbage
1 bulb Black Garlic
6-8 Tbsp of Trader Joe’s Spicy, Smokey Peach Salsa
Sprinkle of Cumin, Chili Powder, Salt and Pepper to taste
Dice the onion and let it start to cook in a hot skillet.
Then add the ground beef and spices to the hot skillet with the onion.
Cook on medium/high until the onion is translucent and the ground beef is almost completely cooked.
Then add the black garlic and turn the heat on low to let the mixture simmer together.
Once the ground beef is cooked and the mixture has simmered a minute or two, warm the tortillas in the oven or a skillet or the microwave.
Top the warm tortillas with the ground beef mixture. Add the salsa and cabbage on top and serve.
Ryan also topped the tacos with a few southwestern-inspired kale chips we had lying around.
This recipe makes 6-8 tacos.
