The Breakfast Salad with Poached Eggs and Bacon

Salad for breakfast?

YUP!

Sounds a bit strange, but it is super good (and this is coming from someone who isn’t necessarily a fan of salads!).

Some power greens, poached eggs and bacon make this one DELICIOUS breakfast.

The Breakfast Salad with Poached Eggs and Bacon

Ingredients:
4 eggs
4 strips of nitrite-free bacon
2-3 cups of Power Greens (chopped Brussel sprouts, broccoli, kale, red cabbage, green cabbage)
2 tbsp Hummus
1 tbsp Heavy Whipping Cream
1 tsp Dill
Salt and Pepper to taste

Cook bacon in a skillet on medium/high heat. When bacon is cooked, remove from pan and put the heat on low to use for the greens.

Poach eggs while you are cooking the bacon. To poach eggs, check out this recipe.

When the bacon is done and the eggs are poaching, toss the greens quickly in the bacon grease on low heat. Then divide between plates. Crumble bacon strips on top (we crumbled one and then left the other one on the side to enjoy).

Place poached eggs on top of the greens. Quickly combine hummus, cream, dill, salt and pepper. Then drizzle on top of greens and eggs.

Serve and enjoy!
